DEVELOPMENT OF A KNOWLEDGE-BASED TOOL FOR THE USE OF NATURAL ADDITIVES IN THE PRODUCTION OF SULFITES-FREE WINES

The objective of the proposal is the production of wines without sulfites or with low sulfites content, which is interesting considering the negative health impact of sulfites . The project is based on the results obtained by some of the partners of a previous EC-funded project in which some natural additives were successfully tested on a laboratory scale. The aim of this project is to move from the laboratory scale to the industrial scale. Therefore, the development of a software capable of predicting and managing the effect of additives on wine from the data collected in the winemaking process is envisaged.
