The main objective in this project is the improvement in homogeneity and quality in Rioja wines through the control of dissolved oxygen during the winemaking process within the winery with non-intrusive techniques and the development and/or implementation of new technologies that allow a reduction in concentration and its effects to oxygen exposure.
