The main objective of the project is to improve the homogeneity and quality of Rioja wines through the isolation, identification and characterisation of autochthonous yeasts in Tempranillo grapes in order to generate its own bank of yeasts, Saccharomyces and No-Saccharomyces, which will give it a unique seal of fermentative identity.
