The objective of this project is to develop a new winemaking methodology based on a knowledge system capable of predicting and creating a model of the effects that additives have on wine by using the data collected in the winemaking process.
This tool will assist wineries in selecting the optimal additive for their wine replacing the addition of SO2 at each step of the winemaking process.
