OBTAINING WHITE WINES WITH EXTENDED SHELF LIFE USING NEW PROCESS MANAGEMENT PROTOCOLS IN THE WINERY

The general objective of this project is to increase the useful life of white wines made from the autochthonous Viura grape variety by studying the compounds that can be used as indicators for premature aging and their application in the development of new winemaking management techniques in Bodegas del Medievo. In this way, it is hoped to extend the useful life of these wines by up to two years, from the current 2-5 years to 4-7 years.
